Low Carb Chicken Salad
I was stumped for what to make for my weekly meal prep this week. So, when I thought of some low-carb chicken salad, I was thrilled. After eating loads of marinated chicken, beef, and pork lately, I definitely needed a change of pace.
And this low carb chicken salad definitely does the trick!
What I love about this chicken salad is that it is loaded with crunchy goodness from some well-placed celery and onion. Plus, it has some spicy, peppery goodness from the ground black pepper. Then, hard-boiled eggs get mixed in, adding additional creaminess and extra protein and fat to the entire dish.
And to top this chicken salad off....
You sprinkle it with fresh dill. Of course, this is totally optional. The chicken salad is delicious with or without the dill.
As for the best thing about this dish?
Aside from it being low carb and low in sugar, it uses a rotisserie chicken. That means you aren't actually cooking anything. Unless you boil the eggs, but you can also buy those pre-boiled. While removing the skin and bones from the chicken does take a little while, you can easily stream a television show, as I did, while you make this chicken salad. Then, it will be ready in no time. Plus, you will have enough for all week. That is pretty exciting, if you ask me! Enjoy!

Ingredients
1 Rotisserie Chicken, Approximately 2 1/2 lb
5 tsp Dijon Mustard
7 TBSP Mayonnaise
1 Cup Celery, Chopped, Approximately 4 Stalks
5 Large Hard Boiled Eggs
1 Cup White or Red Onion, Chopped
1/2 tsp + 1/8 tsp Ground Black Pepper
Fresh Dill, To Taste, Optional
Instructions
Remove skin from chicken and de-bone. This leaves approximately 1lb 9oz of chicken.
Tear apart de-boned and de-skinned chicken into smaller chunks, placing in a bowl as you go.
Add mayonnaise and mustard. Mix well.
Remove shells from eggs, and chop into small pieces. Add to the bowl.
Chop or dice the celery and onion into small pieces, and add to bowl.
Mix well.
Add ground black pepper, and mix once more.
Add fresh dill. This is optional, but a great addition.
