Easy Lemon Frosting: Ready in Less Than 5 Minutes
If this bright and sunny easy lemon frosting doesn't scream Spring, I don't know what does! This incredibly refreshing, lemon frosting is absolutely to die for, without being overly sweet. In fact, the only sugar it has, is a half-cup of Swerve confectioners, and one and a half Splenda packets. Not too shabby, if you ask me.
But what to eat this high fat, easy lemon frosting with?
Here are a few ideas...
On top of a cake or cupcake.
As a glaze on top of a good breakfast bread.
As a cream or dip, for you to dunk berries in.
And my favorite, nothing at all! Just dip your finger right into the bowl and lick it clean!
But here's the deal...
This frosting is so good, it is addicting! So, if you are dipping your finger right into that lemon frosting, be aware that the bottom of the bowl might show up a bit sooner than expected. And, while this is technically keto, it still utilizes a lot of sugar alcohols from the Swerve. That means it might be better to just take a little bit at a time and put it back in the fridge.
This frosting will hold up for at least a week in a tightly sealed Tupperware.
As for lasting longer than a week? Well, I can't speak to that. I haven't had enough will power to let it last that long.
And one last thing before I let you go.
When I mention this easy lemon frosting, I want to clarify what easy means here: Five minutes. No special melting or waiting to cook something ahead of time. This is strictly, throw everything in the mixer, whip for two or three minutes, and you are done. The extra two minutes was just so you could get those ingredients out of the fridge. See, easy!

Ingredients
1 Block 1/3 Less Fat Philadelphia Cream Cheese, Room Temperature, Softened
1 Stick Unsalted Butter, Room Temperature, Softened
1/4 Cup Heavy Whipping Cream
1/2 tsp Lemon Extract, Plus a Few Drops As Desired
1/4 tsp Vanilla Extract
1 1/2 Splenda Packets
1/2 Cup Swerve Confectioners
Instructions
Add everything to the mixing bowl except for the Swerve.
Turn the mixer on high and whip.
Slowly pour in the Swerve as the mixer is going. You can pour continuously, just pour slowly so the powder doesn't come flying back towards you.
Use a spatula as needed for the sides of the bowl and mixing appliance, to ensure all ingredients are whipped well.
Notes
Sugar alcohols are 4.3 grams. However, they are not considered in the nutritional information. If you do not count sugar alcohols as carbs, then the carb count would actually be .5 grams.
